THE SCENARIO:
Some people are afraid of this fruit as it is often perceived as a diet gate-crasher when in reality it is high in good fats. Not to mention it is filling and uber flavorful. It’s definitely become a staple in my kitchen. Jonesing for avocado, but don’t want to fuss or create a big mess. The answer? An easy cold salad that is as tasty as it is colorful.
THE RECIPE:
2 Avocado, halved, pitted, cubed + 10 cherry tomatoes, quartered + 1/4 red onion, sliced thin + drizzle extra virgin olive oil and balsamic vinaigrette + salt and pepper to taste
- Combine all ingredients
- Gently fold together so as not to mash avocado
The Result:
Delicious dish that looks more time consuming than it is. Serve with a fancy cracker.
